Buffalo Chicken Stuffed Sweet Potatoes

2 tablespoons Sun Rain Grow Original Ghee
2 chicken breasts, butterflied
Salt and pepper to taste
½ cup buffalo sauce
2/3 cups ranch dressing
¼ cup dairy free cream cheese
1.) Sauté two butterflied chicken breasts in Sun Rain Grow Original Ghee and once cooked through, remove chicken and shred in a bowl.
2.) In a saucepan, add buffalo sauce, ranch, and cream cheese. Combine and heat on medium until mixture begins to bubble, the remove and pour on top of chicken.
3.) Mix chicken and sauce and stuff in a cooked sweet potato that is sliced open.
